Fragrant and flavorful pilaf to delight your palate.
Ingredients:
  • 315g (1 1/2 cups) white long-grain rice
  • 60mls (1/4 cup) olive oil
  • 6 green shallots, trimmed, sliced
  • 1 tsp fennel seeds
  • 560mls (2 1/4 cups) vegetable liquid stock
  • 60mls (1/4 cup) fresh lemon juice
  • 2.40 gm salt
  • 1 tsp ground black pepper
Instructions:
  • Thoroughly rinse the rice in a sieve under cold running water until the water is clear.
  • In a large heavy-based saucepan over medium heat, warm up the olive oil. Sauté the green shallots for 2-3 minutes until soft, then add the fennel seeds and rice. Stir constantly for 1 minute until the fennel seeds are fragrant and the rice is lightly toasted.
  • Turn the heat up to high and boldly add the stock, lemon juice, salt, and pepper. Once it reaches a boil, cover the pot, lower the heat, and gently simmer without peeking for 15 minutes or until the liquid is absorbed. Fluff the rice with a fork to loosen the grains and serve promptly.
