Feta and olive roast tomatoes

Versatile stuffed tomatoes - perfect as a starter or side dish for meat entrees.
Ingredients:
  • 4 medium vine-ripened truss tomatoes
  • 60g feta, crumbled
  • 80g olive
  • 62.50 ml chopped fresh basil
  • 18.20 gm extra virgin olive oil
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with foil. Gently cut the vine tomatoes, leaving some stem attached. Slice off the top of each tomato horizontally, keeping the tops intact. Scoop out the seeds and core using a small teaspoon.
  • Mix the feta, olives, and basil together, then fill the tomatoes with the mixture. Place the tomato tops back on and transfer to a baking tray. Bake for 15-20 minutes and serve right away.
