Impressively simple lamb rack recipe with only 6 ingredients for a fancy and delicious meal.
Ingredients:
  • 2 racks lamb (8 cutlets each), trimmed
  • 100g marinated fetta, crumbled
  • 36.80 gm oil, reserved from marinated fetta (see note)
  • 40.00 ml chopped fresh oregano
  • 20.00 ml balsamic vinegar
  • 6 vine-ripened tomatoes
Instructions:
  • Preheat your oven to 200°C.
  • Create a 3cm-deep pocket in the meat next to the cutlet bones. Fill the pocket with marinated feta by hand. Tie meat with string and put it in a greased roasting pan, standing it upright with the bones interlocked.
  • Mix oregano, balsamic vinegar, and marinated fetta oil, then brush over the meat. Season with salt and pepper. Place the tomatoes around the lamb and roast for 20-25 minutes (for medium) or until desired doneness.
  • Rest the succulent lamb for 10 minutes to enhance its flavors, then elegantly pair it with roast tomatoes before serving.
