Fiery Fish Tacos with Crunchy Corn Salsa

Grilled spicy fish topped with refreshing corn salsa - a guaranteed crowd-pleaser!
Ingredients:
  • 2 cups cooked corn kernels
  • 0.5 cup diced red onion
  • 1 cup peeled, diced jicama
  • 0.5 cup diced red bell pepper
  • 1 cup fresh cilantro leaves, chopped
  • 1 lime, juiced and zested
  • 2 tablespoons cayenne pepper, or to taste
  • 1 tablespoon ground black pepper
  • 2 tablespoons salt, or to taste
  • 6 (4 ounce) fillets tilapia
  • 2 tablespoons olive oil
  • 12 corn tortillas, warmed
  • 2 tablespoons sour cream, or to taste
Instructions:
  • Heat up the grill on high.
  • Combine corn, red onion, jicama, red bell pepper, and cilantro in a bowl. Add lime juice and zest, and mix well.
  • Mix together cayenne pepper, ground black pepper, and salt in a small bowl.
  • Coat each fillet in olive oil and season generously with spices.
  • Place fillets on the grill grate and grill for 3 minutes on each side. Top each corn tortilla with fish, sour cream, and corn salsa to create fiery fish tacos.
