Italian-inspired crepes with caramelized figs and creamy mascarpone filling.
Ingredients:
  • 20g butter
  • 32.00 gm brown sugar
  • 8 fresh figs, quartered
  • 1.25 gm ground ginger
  • 8 frozen French-style crepes
  • 100g mascarpone
  • Icing sugar mixture, to serve
Instructions:
  • In a frying pan over medium-low heat, caramelize the fig and ginger in a mixture of melted butter and brown sugar, stirring for 3-4 minutes.
  • Warm the crepes according to the packet instructions until heated through.
  • Serve the crepes on individual plates, generously top with the fig mixture and mascarpone, then sprinkle with a light dusting of icing sugar before enjoying.
