Exotic spicy fish soup to tantalize your taste buds.
Ingredients:
  • 1 brown onion, peeled, quartered lengthways, thinly sliced
  • 5 green shallots, trimmed, thinly sliced
  • 20.00 ml finely chopped fresh ginger
  • 1 large fresh long red chilli, halved, thinly sliced
  • 1.75L (7 cups) water
  • 1kg bream fillets, skin removed, cut into 2cm pieces
  • 60ml (1/4 cup) fresh lemon juice
  • 100ml coconut cream
  • 125.00 ml fresh coriander leaves
  • Salt & freshly ground black pepper
Instructions:
  • In a large saucepan, heat the oil over medium-high heat until shimmering. Add the onion and cook, stirring occasionally, until soft, about 5 minutes.
  • Sauté green shallots, ginger, and chili for 1 minute until shallots start to soften. Pour in water, cover, and bring to a boil. Add fish and lemon juice. Simmer uncovered for 4-5 minutes until fish is cooked through, stirring occasionally.
  • Add the luscious coconut cream and fresh coriander to the dish. Season with a pinch of salt and a grind of pepper to enhance the flavors. Serve while hot for a delightful culinary experience.
