Delicious fish and chips, a family favorite!
Ingredients:
  • 1.25kg desiree potatoes
  • 62.50 ml plain flour
  • 1 egg
  • 41.20 gm milk
  • 187.50 ml cornflake crumbs
  • 4 x 125g pieces boneless white fish
  • 123.75 gm low-fat mayonnaise
  • 20.00 ml finely chopped capers
  • 1 tsp lemon rind
  • 20.00 ml chopped parsley
Instructions:
  • Prepare perfectly crispy potato chips by slicing 1.25kg of unpeeled desiree potatoes into 1cm-thick chips. Lightly spray with olive oil, sprinkle with salt, and evenly spread them on two baking paper-lined trays. Bake in a preheated 220°C oven for 35-40 minutes until beautifully crisp and golden brown.
  • Mix together 1/4 cup of plain flour, 1 egg, and 2 tablespoons of milk. Then, stir in 3/4 cup of cornflake crumbs and use the mixture to coat 4 pieces of 125g boneless white fish. Place the fish on a baking tray and place it on the bottom rack of the oven. Lower the oven temperature to 200°C.
  • Bake the fish on a separate tray for 12-15 minutes. Mix 1/2 cup of low-fat mayonnaise with 1 tablespoon of finely chopped capers, 1 teaspoon of lemon zest, and 1 tablespoon of chopped parsley. Drizzle the sauce over the fish, along with some chips and a fresh green salad.
