Enjoy guilt-free fish and chips bursting with flavor.
Ingredients:
  • 1.25kg unpeeled desiree potatoes
  • olive oil spray
  • salt
  • 4 x 125g pieces boneless white fish
  • 62.50 ml plain flour
  • 1 egg with 2 tbsp milk
  • 187.50 ml cornflake crumbs
  • 123.75 gm low-fat mayonnaise
  • 20.00 ml finely chopped capers
  • 1 tsp lemon rind
  • 20.00 ml chopped parsley
Instructions:
  • Cut 1.25kg of unpeeled Desiree potatoes into 1cm thick chips, spray with olive oil, toss with salt, and spread evenly over two baking trays lined with parchment paper. Bake in a preheated 220°C oven for 35-40 minutes until crispy and golden brown.
  • Mix together 1/4 cup plain flour, 1 egg, and 2 tablespoons milk. Then, stir in 3/4 cup cornflake crumbs until well combined. Coat 4 x 125g pieces boneless white fish with the mixture. Transfer the coated fish to a baking tray and place on the bottom rack of the oven. Lower the oven temperature to 200°C.
  • Bake fish on a separate tray for 12-15 minutes. Mix 1/2 cup low-fat mayonnaise, 1 tablespoon finely chopped capers, 1 teaspoon lemon zest, and 1 tablespoon chopped parsley. Enjoy the sauce with the fish, fries, and a side salad.
