Fish pie

Versatile and comforting fish pie that will please any crowd.
Ingredients:
  • 1 carrot
  • 1 kg potatoes
  • 2 sticks celery
  • 150 g Cheddar cheese
  • 1 lemon
  • ½ a fresh red chilli
  • 4 sprigs of fresh flat-leaf parsley
  • 300 g salmon fillets skin off, pin-boned, from sustainable sources
  • 300 g undyed smoked haddock fillets skin off, pin-boned, from sustainable sources
  • 125 g raw peeled king prawns from sustainable sources
  • olive oil
  • 1 good handful of baby spinach optional
  • 2 ripe tomatoes optional
Instructions:
  • - Preheat the oven to 200°C/400°F/gas 6. - Peel and cut the potatoes into 2cm chunks, then boil in salted water for 12 minutes until tender. - Grate the carrot, celery, Cheddar, lemon zest, and chili into a baking tray. - Finely chop the parsley and add it to the tray. - Slice the salmon, smoked haddock, and prawns into bite-size pieces and add to the tray. - Squeeze lemon juice over the ingredients and drizzle with olive oil. - Season with salt, pepper, and add any optional spinach or tomatoes. - Mix everything together. - Drain the potatoes, mash them with olive oil, salt, and pepper. - Spread the mashed potatoes over the fish and veg. - Bake for 40 minutes until golden and crispy. - Serve hot with your favorite sides.
