Flavorful and wholesome fish stew.
Ingredients:
  • 18.20 gm extra-light olive oil
  • 4 garlic cloves, finely chopped
  • 1 tsp ground turmeric
  • 2 x 400g cans whole peeled tomatoes
  • 400g can cannellini beans, drained, rinsed
  • 600g ling fish fillets, cut into large pieces (see note)
  • 82.50 ml fresh coriander leaves, chopped
  • 4 crusty wholegrain bread rolls, to serve
Instructions:
  • In a large saucepan over medium heat, heat oil and sauté garlic for 1 minute. Add turmeric and cook for another 30 seconds. Lower the heat, then mix in tomatoes and 1 cup of cold water. Cover and bring to a boil, then simmer for 10 minutes.
  • Add the beans back to the pot and bring to a boil. Introduce the fish to the pot. Cover and simmer for 5 minutes or until the fish is fully cooked.
  • Ladle the flavorful stew into bowls, garnish with fresh coriander, and enjoy with warm bread rolls.
