Ingredients:
  • 60ml olive oil
  • 2 Spanish onions, halved, thinly sliced
  • 200g sweet potato
  • 1 red capsicum, seeded, thickly sliced
  • 2 tsp freshly ground black pepper
  • 2.50 gm ground cumin
  • 1/2 tsp ground turmeric
  • 1.25 gm ground cinnamon
  • 1kg white fish fillets (snapper or blue eye), cut into 2cm pieces
  • 2 tomatoes, cut into wedges
  • 400g couscous
  • 40g almond
  • 1 clove garlic, crushed
  • 2 tsp finely grated lemon rind
  • 250.00 ml coarsely chopped coriander
Instructions:
  • In a heavy-based saucepan over medium heat, sauté onions in oil until soft. Stir in sweet potato, capsicum, and spices for 1 minute. Cover and simmer for 5 minutes.
  • Add a 1/3 cup of water along with the fish, tomatoes, and salt to your cooking vessel. Cover and simmer for 10 minutes, or until the fish is perfectly cooked.
  • Prepare the couscous as directed on the packet. Mix almonds, garlic, lemon rind, and coriander in a small bowl. Serve the tagine over the couscous, garnished with the almond mixture.
