Create a savory fish and mussel stew using flavorful Muir Glen™ diced tomatoes for a delightful dinner.
Ingredients:
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped shallots or onion
  • 1/2 cup finely chopped red bell pepper
  • 3/4 cup dry white wine
  • 1/2 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, finely chopped
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 dried bay leaf
  • 1 lb grouper or other mild-flavored firm fish fillets, cut into serving pieces
  • 1 1/2 lb small fresh mussels in shells, scrubbed, debearded
  • 2 tablespoons chopped fresh Italian (flat-leaf) parsley
Instructions:
  • In a Dutch oven, warm oil over medium heat. Sauté shallots and bell pepper for 5 minutes, then add wine, basil, salt, pepper, garlic, tomatoes, and bay leaf. Simmer over low heat for 5 minutes, stirring occasionally.
  • Gently tuck fish pieces into the flavorful tomato mixture and place the mussels on top. Allow it to simmer covered for 8 minutes, giving the pan a couple of gentle shakes to stir the mussels without lifting the lid. Once the mussel shells have opened, remove any that remain closed. Finish by taking out the bay leaf and adding a sprinkle of fresh parsley on top before serving.
