Creamy fisherman's pie with milk-poached smoked cod and buttery puff pastry. A show-stopping dish for any occasion.
Ingredients:
  • 2 sheets frozen puff pastry, just thawed
  • 2 brown onions
  • 750g smoked cod
  • 2 whole cloves
  • 1 dried bay leaf
  • 750ml (3 cups) milk
  • 60g butter, chopped
  • 300g (2 cups) mixed vegetables (such as peas, cauliflower and carrot)
  • 40.00 ml plain flour
  • 62.50 ml chopped fresh continental parsley
Instructions:
  • Preheat the oven to 200C/180C fan forced. Grease a 20cm pie dish. Roll out a sheet of pastry on a floured surface to line the dish. Bake until golden, then carefully flatten the pastry while hot using a tea towel.
  • Cut 1 onion in half. In a large saucepan, combine the halved onion, cod, cloves, bay leaves, and milk. Bring to a gentle simmer over medium-low heat, cover, then remove from heat. Let it sit for 10 minutes to poach. Carefully flake the cod and transfer it to a dish using a slotted spoon. Pour 500ml of the milk mixture through a strainer into a bowl, discarding the rest. Allow it to cool before using.
  • Finely chop the remaining onion. Melt 20g of butter in a frying pan over medium heat. Add onion and mixed vegetables, stirring and cooking for 3-5 minutes until slightly softened. Remove from heat and transfer to a dish.
  • In a saucepan over medium heat, melt the rest of the butter. Whisk in flour and cook for 2 minutes. Remove from heat. Gradually whisk in the milk mixture until smooth. Bring back to heat and cook for 5 minutes, stirring constantly until the mixture boils and thickens. Stir in parsley, season with salt and pepper. Pour the sauce over the cod and vegetables.
  • On a floured surface, roll out the remaining pastry slightly larger than the dish. Gently place it over the pie, pressing the edges to seal. Trim any excess pastry. Use a fork to seal the edges once more, then cut a small hole in the center. Brush with egg wash. Bake for 30 minutes until beautifully puffed and golden. Season to taste and enjoy your delicious pie!
