Creamy fish casserole with leftover mashed potatoes.
Ingredients:
  • 1 pound cod fillets, cut into chunks
  • 3 tablespoons butter
  • 2.5 tablespoons all-purpose flour
  • 1.5 cups warm milk, or more as needed
  • 1 cup shredded sharp white Cheddar cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 0.5 cup minced onion
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon ground black pepper, or to taste
  • 1 clove garlic, pressed
  • 2 cups mashed potatoes
  • 1 cup shredded yellow Cheddar cheese
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Place the cod in a large baking dish in a single layer, and set it aside.
  • In a saucepan over gentle heat, melt butter until fragrant. Add flour and stir until a golden paste forms, about 2 to 5 minutes.
  • Slowly incorporate the warm milk into the flour mixture while stirring constantly until it thickens and becomes smooth, for about 5 minutes of simmering over medium heat.
  • Combine creamy white Cheddar cheese into the mixture, then fold in the onions, spinach, salt, and black pepper to create a flavorful sauce.
  • Take the saucepan off the heat, and gently mix in the garlic. If the sauce is too thick, slowly whisk in additional warm milk by the tablespoon.
  • Cover the fish in a delicious blanket of sauce in the baking dish.
  • Spread a generous layer of creamy mashed potatoes over the dish.
  • After baking in the preheated oven for 30 minutes, generously sprinkle yellow Cheddar cheese over the fish. Return to the oven and bake for an additional 15 to 20 minutes, or until the fish flakes easily with a fork.
