Flammkuchen is a delicious flatbread with creamy sauce, onions, and crispy bacon, a beloved dish from Alsace enjoyed throughout France and Germany.
Ingredients:
  • 3 cups all-purpose flour
  • 3 tablespoons all-purpose flour
  • 1 (.25 ounce) package active dry yeast
  • 1 cup lukewarm water
  • 1 pinch white sugar
  • 3 tablespoons olive oil
  • 0.5 teaspoon freshly ground black pepper
  • 6 ounces bacon strips, diced
  • 3 onions, cut in half and thinly sliced
  • 0.75 cup heavy cream
  • 2 tablespoons heavy cream
  • 0.75 cup sour cream
  • 0.5 teaspoon salt
  • 1 tablespoon finely chopped parsley
Instructions:
  • In a large bowl, create a well in the center of 3 cups plus 3 tablespoons of flour. Pour yeast, 3 to 4 tablespoons of lukewarm water, and sugar into the well. Stir in a small amount of flour from the sides and let it sit until the mixture becomes frothy, approximately 10 minutes.
  • Pour the remaining water and olive oil into the mixture, and use a wooden spoon to combine everything thoroughly. Sprinkle in 1 teaspoon of salt, then knead the dough vigorously with your hands until it forms a cohesive ball.
  • Cover the dough gently with a clean dish towel and allow it to double in size in a cozy, dry spot for around 30 minutes.
  • As the dough is resting, combine 3/4 cup plus 2 tablespoons of heavy cream and sour cream in a bowl until silky; season with salt, pepper, and parsley to taste.
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Divide the dough into 4 equal pieces. Roll out 2 pieces as thinly as possible into long rectangles on a large piece of parchment paper, ensuring both will fit on one baking sheet. Fold the sides of the dough pieces to form a 1/4-inch edge all around. Spread the cream topping evenly across the dough and top each piece with 1/4 of the bacon and the onion rings. Carefully transfer the 2 flammkuchen with the parchment paper onto a baking sheet.
  • Bake until golden brown and crispy in the preheated oven for about 20 minutes. Repeat with remaining dough pieces.
