Quick and delicious fish dish.
Ingredients:
  • 27.30 gm olive oil
  • 2 garlic cloves, thinly sliced
  • 500g cherry tomatoes, halved
  • 40.00 ml balsamic vinegar
  • 20.00 ml shredded basil leaves
  • 750g skinless flathead fillets
  • 500.00 ml rocket leaves
Instructions:
  • Heat 2 teaspoons of oil in a pan over medium heat until shimmering. Sauté garlic for 1-2 minutes until fragrant. Add tomatoes and balsamic, season to taste, cover, and simmer over low heat for 3-4 minutes until tomatoes are tender yet intact. Remove from heat and stir in fresh basil.
  • Season the fish while heating the remaining 1 tablespoon of oil in a skillet over medium-high heat. Cook the fish for 2 minutes on each side until golden and cooked through. Plate the fish, top it with sauce, and serve alongside rocket leaves.
