Fluffy Strawberry Pie with Pretzel Crust

Salty pretzel crust meets refreshing fruity filling in a no-bake pie.
Ingredients:
  • 1 1/4 cups crushed pretzels
  • 1/4 cup granulated sugar
  • 1/2 cup butter or margarine, melted
  • 3/4 cup boiling water
  • 1 package (4-serving size) Jell-O™ strawberry-flavored gelatin
  • 1 teaspoon grated lime peel
  • 1/4 cup lime juice
  • 1 1/2 cups whipping (heavy) cream
  • 3/4 cup powdered sugar
  • 2 cups strawberries, slightly crushed
  • Chocolate-covered strawberries, if desired
Instructions:
  • Combine all crust ingredients in a medium bowl and firmly press the mixture into the bottom and sides of a 9-inch glass pie plate.
  • In a large bowl, dissolve the gelatin in boiling water. Add lime peel and lime juice, then chill for about 1 hour until thick but not fully set.
  • Whip gelatin mixture with an electric mixer on high for 4 minutes until thick and fluffy. In a chilled large bowl, beat whipping cream and powdered sugar on high until stiff peaks form. Gently fold in the whipped cream and crushed strawberries into the gelatin mixture. Pour the mixture into the crust.
  • Chill for around 8 hours until firm. Top with chocolate-covered strawberries and store covered in the fridge.
