Focaccia Barese al Pomodoro e Olive (Homemade Italian Focaccia with Tomatoes and Olives)

Irresistibly delicious Italian focaccia with potatoes, tomatoes, and olives - a must-have recipe!
Ingredients:
  • 1 potato, unpeeled
  • 6 cups bread flour
  • 2 cups lukewarm water, divided
  • 1 tablespoon active dry yeast
  • 2 teaspoons white sugar
  • 0.5 cup extra-virgin olive oil, divided
  • 2 tablespoons salt, divided
  • 8 vine tomatoes, halved
  • 1 (6 ounce) can pitted black olives in brine
  • 2 tablespoons water
  • 1 tablespoon dried oregano
Instructions:
  • In a large pot, submerge the potato in salted water and bring to a boil. Simmer over medium-low heat until tender, approximately 20 minutes. Drain and rinse with cold water.
  • Peel the potato and mash it in a large bowl using a fork. Add flour and mix thoroughly with your fingertips until the mixture is smooth and lump-free.
  • In a bowl, mix 1 cup of water with yeast and sugar until frothy, then stir in 5 tablespoons of olive oil. Let stand for about 5 minutes.
  • Combine the yeast mixture with the flour mixture. Gradually add the remaining cup of water while mixing until a soft dough forms. Stir in 1 tablespoon of salt.
  • Knead the dough on a clean work surface until smooth and soft for 8 to 10 minutes. Then, transfer the dough to a greased bowl, cover it with a damp cloth, and let it rise in a warm place until doubled in size, which should take about 2 hours.
  • Drizzle a generous amount of 2 tablespoons of olive oil over a large rimmed baking sheet. Gently place the dough on the sheet and spread it out to fill the corners. Decorate the dough with a colorful display of tomatoes and olives.
  • Combine the remaining 1 tablespoon of olive oil and 2 tablespoons of water in a bowl. Brush the mixture over the dough, then sprinkle the remaining 1 tablespoon of salt on top. Cover with a damp cloth and allow to rise for 30 minutes.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C).
  • 1. Bake focaccia on the lower rack of the preheated oven for 15 minutes until the bottom is golden brown. 2. Move focaccia to the middle rack and continue baking until the top is golden, for an additional 10-15 minutes. 3. Sprinkle the top with oregano before serving.
