Barbecue chicken, corn, and pinto beans in convenient packets for a fuss-free meal bursting with flavor.
Ingredients:
  • 8 chicken drumsticks
  • 4 small ears corn
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon butter, melted
  • 0.5 cup barbeque sauce
  • 1 (15 ounce) can pinto beans, rinsed and drained
Instructions:
  • Preheat oven to a piping hot 450 degrees F (230 degrees C).
  • Lightly coat 4 large 12x18 inch sheets of aluminum foil with cooking spray.
  • Place 2 chicken drumsticks and an ear of corn in the middle of each foil sheet. Season generously with salt and freshly ground black pepper.
  • Coat corn kernels in luxurious melted butter.
  • Drizzle chicken with flavorful barbeque sauce.
  • Distribute the pinto beans evenly among each serving.
  • Wrap the chicken and corn snugly in the foil, ensuring the edges are sealed. Place the foil packets in a baking dish.
  • Bake chicken for about 40 minutes until the juices run clear, and an instant-read thermometer near the bone reads 165 degrees F (74 degrees C).
