Food Allergy Mums' chicken casserole

Flavorful supper dish with a delicious sauce, best served with mashed potatoes or rice. Easy to make and satisfying.
Ingredients:
  • 2 tablespoons olive oil
  • 4-6 boneless higher-welfare chicken thighs with skin on (depending on the age and appetite of your children)
  • 100 g higher-welfare bacon lardons or chopped bacon
  • 1 large onion chopped
  • 2 small sweet potatoes peeled and cut into cubes
  • 16 button mushrooms cut into quarters
  • 500 ml fresh chicken stock
  • 3 sprigs of thyme
Instructions:
  • In a heavy-based pan, heat oil over medium-high heat and fry chicken, skin side down until crispy, about 5 minutes. Cook in batches if necessary. Remove chicken with a slotted spoon and set aside. Discard excess fat. In the same pan, cook bacon, onions for 5 minutes until golden. Add sweet potato, mushrooms, and return chicken (skin side up). Pour in stock until it just reaches chicken skin, add thyme, cover. Simmer gently for 10-15 minutes until chicken is cooked. Test doneness by cutting into a piece. If too much sauce, strain, boil to thicken.
