Food Allergy Mums' chicken drumsticks

Ingredients:
  • olive oil
  • 6-8 chicken drumsticks (depending on the age and appetite of your children)
  • ½ a red pepper
  • ½ a yellow pepper
  • ½ an orange pepper
  • 1 lemon
  • 200 ml chicken stock (see tip)
  • 1 small bay leaf
  • 1 small handful of fresh parsley
Instructions:
  • 1. Preheat the oven to 200°C/400°F/gas 6. 2. Sear the chicken drumsticks in a hot pan with oil until skin is golden. 3. Slice peppers and quarter the lemon. 4. Transfer all ingredients (except parsley) to ovenproof pan or roasting tin. 5. Season with black pepper and bake for 30-35 minutes until chicken is cooked through. 6. Remove lemon quarters and bay leaf. 7. Garnish with parsley before serving.
