Transport back in time with these Prehistoric Fritters made with dinosaur footprints.
Ingredients:
  • 900g sebago potatoes, peeled, chopped
  • 80g butter, chopped
  • 0.60 gm sea salt
  • 250.00 ml plain flour
  • 125.00 ml grated cheddar
  • 2 green onions, thinly sliced
  • 125.00 ml frozen corn kernels
Instructions:
  • In a large saucepan, cover the potato with cold water and bring it to a boil over high heat. Boil for 12 to 15 minutes until the potato is tender, then drain. Transfer the cooked potato to a bowl and mash until smooth. Let it stand for 10 minutes to cool.
  • Mix baking powder and 40g butter into the potato until combined. Add salt, flour, cheese, onion, and corn. Gently stir until just combined. Shape 1/4 cup of the mixture into a ball on a floured surface. Flatten the ball to 1cm thickness. Use a template to create an imprint on the round. Transfer to a baking tray lined with parchment paper. Repeat with the rest of the mixture, flouring the template each time.
  • In a frying pan over medium heat, melt some butter. Cook fritters in batches, starting with the side facing up, for 2 to 3 minutes per side until golden, adding more butter as needed. Place on a baking tray lined with paper towel to drain, then season with salt and pepper. Serve right away.
