Delicious chilled dessert with pecan shortbread crust, creamy cream cheese layer, rich butterscotch pudding, and fluffy whipped topping.
Ingredients:
  • 0.5 cup margarine
  • 1.25 cups confectioners' sugar, divided
  • 1 cup all-purpose flour
  • 1.125 cups chopped pecans
  • 1 (8 ounce) package cream cheese
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 2 (3.4 ounce) packages instant butterscotch pudding mix
  • 3 cups milk
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C), then generously coat a 9x13 inch baking dish with cooking spray.
  • Combine margarine and 1/4 cup confectioners' sugar until creamy. Add flour and 1 cup pecans, then press mixture into prepared dish.
  • Bake in a preheated oven for 15 minutes until lightly golden. Allow to cool completely.
  • Cream together cream cheese and 1 cup confectioners' sugar until smooth. Gently fold in half of the whipped topping. Spread the mixture over the cooled crust.
  • Combine pudding mix and milk until slightly thickened. Spread over cream cheese layer, top with remaining whipped topping and sprinkle with remaining nuts. Refrigerate before serving.
