Fragrant chicken wonton soup

Create delectable homemade wonton soup.
Ingredients:
  • 2 litres chicken style liquid stock
  • 42.00 gm salt-reduced soy sauce
  • 2cm piece fresh ginger, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 1 cinnamon stick
  • 1 star anise
  • 1 bunch baby choy sum
  • 1 green onion, thinly sliced diagonally
  • 62.50 ml fresh coriander leaves
  • 62.50 ml fresh mint leaves
  • Sambal oelek, to serve
  • 250g chicken mince
  • 2 garlic cloves, crushed
  • 2 green onions, finely chopped
  • 24 wonton pastry wrappers
Instructions:
  • For the chicken wontons, mix together minced chicken, garlic, soy sauce, and onion by hand in a bowl. Place a wrapper on a flat surface. Spoon 2 teaspoons of the chicken mixture onto one half of the wrapper. Dab the edge with cold water. Fold the wrapper diagonally to create a triangle, making sure to press the edges to seal. Lightly brush the corners with water. Bring the two bottom corners together and press to seal. Transfer the wonton to a baking tray lined with parchment paper. Repeat the process with the remaining wrappers and chicken mixture. Chill in the refrigerator.
  • In a large saucepan over medium-high heat, combine stock, soy sauce, ginger, garlic, cinnamon, and star anise. Cover and bring to a boil. Reduce heat and simmer for 10 minutes to enhance flavors. Strain the mixture, discard the ginger, garlic, cinnamon, and star anise, then return the stock to the pan.
  • Separate choy sum leaves from stems. Chop stems into 3 pieces and roughly chop the leaves.
  • Combine wontons and choy sum stems with the stock mixture and bring to a boil over medium-high heat. Allow to boil for 5 minutes, then add the leaves and cook for an additional 2 minutes until wilted.
  • Divide the soup into bowls and garnish with onion, coriander, and mint. Enjoy with a side of sambal oelek.
