Frank's Hungarian cucumber salad and korozott

Savor a classic Hungarian cucumber salad with zesty cheese spread.
Ingredients:
  • 2 telegraph cucumbers, peeled, thinly sliced
  • 4.80 gm salt
  • 2.50 gm caster sugar
  • 62.50 ml white wine vinegar
  • 2 garlic cloves, crushed
  • 7.50 gm sweet paprika
  • 2 tsp chopped fresh chives
  • Rye bread, to serve
  • Crackers, to serve
  • Halved cherry tomatoes, to serve
  • Red capsicum, to serve
  • Carrot sticks, to serve
  • Celery sticks, to serve
  • 250g block cream cheese, chopped, softened
  • 60g unsalted butter, chopped, softened
  • 2.50 gm sweet paprika
  • 1/2 tsp mustard powder
  • 1/2 tsp crushed caraway seeds
Instructions:
  • Prepare the Korozott by thoroughly mixing cream cheese and butter in a bowl. Stir in paprika, mustard powder, and caraway seeds. Season with salt and pepper, then cover with plastic wrap and refrigerate overnight for flavors to enhance.
  • In a bowl, place the cucumber with salt and toss to combine. Let it sit for 1 hour to slightly soften. Drain the cucumbers well, squeezing out any excess liquid, rinse under cold water, and transfer to a large bowl.
  • In a small bowl, mix sugar, vinegar, garlic, paprika, and 2/3 cup water until sugar dissolves. Pour the flavorful mixture over the cucumber slices, season with salt and pepper, cover with plastic wrap, and chill in the refrigerator for 2 hours. Enjoy the refreshing result!
  • Garnish korozott with a generous sprinkle of fresh chives. Serve alongside refreshing cucumber salad, hearty rye bread, crispy crackers, and colorful vegetable sticks.
