French onion roasted potatoes recipe

Elevate roast potatoes with French onion twist for the perfect side dish.
Ingredients:
  • 1.25kg white potatoes, peeled, cut into 4cm chunks
  • 50g butter, finely chopped
  • 1 garlic clove, thinly sliced
  • 40g sachet French onion soup mix
  • 375.00 gm boiling water
  • 2 fresh rosemary sprigs
  • 2 brown onions, thinly sliced
  • 16.00 gm brown sugar
  • Extra fresh rosemary, to serve
Instructions:
  • Preheat the oven to 200C (180C fan-forced).
  • In a roasting pan, combine potatoes, butter, and garlic, tossing to mix well. Sprinkle evenly with soup mix, then pour boiling water over. Add rosemary, season with salt and pepper, and cook for 30 minutes, tossing potatoes halfway through.
  • Heat oil in a medium frying pan over medium-low heat. Cook onion, stirring occasionally, for 10 minutes until softened. Add sugar and cook for 5 more minutes until caramelised. Remove from heat.
  • Arrange the onion mixture around the potato in the pan and bake for an additional 5 to 10 minutes, or until the potato is tender. Sprinkle with extra rosemary before serving.
