Marinate with beef consomme, tarragon vinegar, and neutral oil. Serve on lettuce-lined plates for a beautiful dish.
Ingredients:
  • 9 potatoes
  • 0.5 cup vegetable oil
  • 0.25 cup tarragon vinegar
  • 0.25 cup beef consomme
  • 0.25 cup chopped green onions
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • Boil salted water in a large pot. Cook potatoes until tender but firm, about 15 minutes. Drain and transfer to a large bowl. Cool slightly, then peel and slice.
  • Mix together oil, vinegar, consomme, green onion, parsley, salt, and pepper in a small bowl.
  • Toss warm potatoes gently with dressing, then refrigerate covered for several hours or overnight.
