French roast chicken with whole garlic

Indulge in irresistible crispy chicken paired with flavorful roasted garlic for a sensational dinner.
Ingredients:
  • 1 large lemon
  • 45.50 gm extra-virgin olive oil
  • 4 garlic cloves, crushed
  • 2.40 gm sea salt
  • 1.7kg free-range whole chicken, cleaned, rinsed, patted dry
  • 4 sprigs thyme
  • 4 bulbs garlic
  • Potato mash, to serve
  • Steamed green beans, to serve
Instructions:
  • Preheat the oven to 190°C. Cut a lemon in half and juice one of the halves.
  • Mix the lemon juice, oil, crushed garlic, and salt together and season with pepper. Rub this flavorful baste all over the chicken, inside and out. Stuff the chicken cavity with the remaining lemon half and thyme, then secure the legs together with unwaxed string.
  • Place the chicken, breast side down, on a rack in a large roasting pan and roast for 15 minutes. Cut the tops off garlic bulbs to expose the cloves, then drizzle them with the remaining oil.
  • Flip the chicken and arrange garlic cloves, cut side up, around the chicken on the rack. Roast for an additional 45 minutes or until the chicken is fully cooked and the juices run clear. Serve the chicken alongside the roasted garlic, mashed potatoes, and beans.
