French-style chicken with savory sauce, perfect for any weeknight. Serve with crusty bread for a delicious meal.
Ingredients:
  • 1 medium brown onion, thinly sliced
  • 600g chicken breast fillets
  • 500g chicken thigh fillets
  • 125ml (½ cup) dry white wine
  • 500ml (2 cups) Chicken Style Liquid Stock
  • 3 tarragon sprigs
  • 3 cloves garlic, crushed
  • 50g salted butter, chopped
  • 20.00 gm cornflour
  • 125ml (½ cup) thickened cream
  • 40.00 ml finely chopped parsley, plus leaves to serve
  • Crusty bread, to serve
Instructions:
  • First, sprinkle a layer of onion at the bottom of a 5.5L slow cooker. Place the chicken on top of the onion. Pour in the wine and stock. Sprinkle with tarragon, garlic, and small pieces of butter. Cover and cook on low heat for 6 hours.
  • Shred the chicken and place it in a serving dish with onions. Strain the cooking liquid, discard the tarragon, and transfer to a saucepan, reserving 2 tbsp. Bring to a boil over medium heat and simmer until reduced by two-thirds, about 10-15 minutes.
  • Whisk cornflour into reserved cooking liquid, then pour into stock mixture. Stir continuously until the sauce thickens and bubbles. Add cream and bring to a gentle boil. Simmer for 2-3 minutes until slightly thickened. Season with parsley, then garnish with more parsley before serving.
  • Drizzle the sauce over the chicken and serve with bread on the side.
