Elevate weeknight dinners with our gourmet pizza recipe.
Ingredients:
  • 4 x 20cm-diameter wholemeal pita bread
  • 80ml pizza sauce
  • 100g mozzarella
  • 1 vine-ripened tomato, seeded, finely chopped
  • 20.00 ml baby salted capers, rinsed, drained
  • 36.40 gm extra virgin olive oil
  • 20.00 ml red wine vinegar
  • 80g baby rocket leaves
  • 8 balls bocconcini, coarsely torn
  • 8 slices prosciutto, halved lengthways, rolled into rosettes
Instructions:
  • Preheat the oven to 200°C. Arrange the pita bread on an oven tray. Top the pita with pizza sauce and a generous sprinkle of mozzarella. Bake for 7-8 minutes, or until the cheese is melted and bubbly.
  • In a small bowl, mix the tomatoes, capers, oil, and vinegar. Season with salt and pepper, then add the rocket and gently toss everything together.
  • Transfer the pizzas to the serving plates. Layer the bocconcini and prosciutto on top of the pizza. Finish with the rocket salad and serve right away.
