Elevate your next BBQ with this impressive pea salad.
Ingredients:
  • 1/2 lemon
  • 1kg fresh peas, shelled
  • 1 370g feta
  • 1 bunch fresh basil, leaves picked
  • Salt & freshly ground black pepper
Instructions:
  • In a small saucepan, submerge the lemon in cold water. Bring to a boil over high heat, then reduce to medium heat and simmer uncovered for 40 minutes until the lemon is soft. Drain and let it cool.
  • Cook the peas in a large saucepan of salted boiling water for 7 minutes until tender. Drain and cool under cold running water. Set aside for later use.
  • Scoop out lemon flesh using a spoon and discard. Finely chop lemon rind.
  • In a large serving bowl, mix together the peas, lemon rind, feta, and basil. Season with salt and pepper to taste. Gently toss until well combined.
