Elevate classic bread pudding with tangy rhubarb, nuts, and a creamy finish.
Ingredients:
  • 8 slices bread without crusts, toasted and cubed
  • 1.5 cups milk
  • 0.25 cup butter or margarine
  • 5 eggs
  • 1.25 cups white sugar
  • 0.25 teaspoon salt
  • 2 cups diced rhubarb
  • 0.25 cup chopped walnuts
Instructions:
  • Preheat the oven to 325°F (165°C) to ensure the perfect cooking temperature.
  • Butter a 2-quart casserole dish and add the bread cubes. Heat the milk and butter in a saucepan until boiling, then pour over the bread cubes. Allow it to sit for 15 minutes. In a medium bowl, combine eggs, sugar, cinnamon, salt, and rhubarb. Pour this mixture over the soaked bread, gently stirring to blend. Sprinkle walnuts on top.
  • Bake in the preheated oven for 50 minutes until golden brown on top. Allow to rest for 10 minutes before serving.
