Pressure cooker Cuban fricassee with tender chicken thighs and drumsticks. Served with black beans and rice.
Ingredients:
  • 1 tablespoon extra-virgin olive oil
  • 0.5 large red bell pepper, diced
  • 0.5 red onion, diced
  • 4 cloves garlic, smashed
  • 2 tablespoons tomato paste
  • 2 cups water, or as needed
  • 6 skinless chicken leg quarters, separated into thighs and drumsticks
  • salt to taste
Instructions:
  • In a pressure cooker, heat olive oil over medium heat. Sauté red bell pepper and onion until onion is soft and translucent, for about 5 minutes. Incorporate garlic and cook until golden.
  • Combine the tomato paste with 1 cup of water until smooth, then pour it into the pressure cooker. Arrange the chicken thighs and drumsticks in the pan in a single layer. Add water until the chicken is almost submerged.
  • 1. Seal the pressure cooker and bring it to high pressure over high heat. Cook the chicken for 15 minutes at full pressure. Let the pressure release naturally for about 20 minutes. Season chicken with salt to taste.
