Ingredients:
1 lb lean (at least 80%) ground beef
1cupchoppedonions
1packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
2/3 cupwater
1can (19 oz) Old El Paso™ Mild Red Enchilada Sauce
1can (15 oz) Progresso™ black beans, drained, rinsed
Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
In a large nonstick skillet, brown the beef and onions over medium-high heat, stirring often until cooked through; drain any excess fat. Add the seasoning mix and water, bringing it to a boil. Lower the heat to medium and let it simmer for 3 to 4 minutes until it thickens. Mix in the enchilada sauce and black beans, cooking for an additional 1 to 2 minutes until heated through.
Layer 4 cups of corn chips in a baking dish. Sprinkle 1 cup of cheese on top, then spoon the beef mixture over the cheese. Finish by sprinkling the remaining 1 cup of cheese on top.
Bake for 18 to 20 minutes until cheese is melted and edges are bubbly. Sprinkle with remaining corn chips and green onions. Serve with sour cream and guacamole.
