Elevate your dinner casserole with Fritos™ for added crunch and flavor. Quick and easy to make with ground beef, onions, and black beans. A savory taco bake perfect for weeknights, ready in under an hour. Get ready for seconds of this delicious Fritos™ taco pie!
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 cup chopped onions
  • 1 packet (1 oz) Old El Paso™ Original Taco Seasoning Mix
  • 2/3 cup water
  • 1 can (19 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 bag (9.25 oz) Fritos™ corn chips (about 5 1/2 cups)
  • 2 cups shredded Mexican cheese blend (8 oz)
  • 1/4 cup chopped green onions
  • 1 cup sour cream
  • 1 cup refrigerated guacamole
Instructions:
  • Preheat the oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a large nonstick skillet, brown the beef and onions over medium-high heat, stirring often until cooked through; drain any excess fat. Add the seasoning mix and water, bringing it to a boil. Lower the heat to medium and let it simmer for 3 to 4 minutes until it thickens. Mix in the enchilada sauce and black beans, cooking for an additional 1 to 2 minutes until heated through.
  • Layer 4 cups of corn chips in a baking dish. Sprinkle 1 cup of cheese on top, then spoon the beef mixture over the cheese. Finish by sprinkling the remaining 1 cup of cheese on top.
  • Bake for 18 to 20 minutes until cheese is melted and edges are bubbly. Sprinkle with remaining corn chips and green onions. Serve with sour cream and guacamole.
