Frittata with Leftover Greens

Create a delicious breakfast frittata using leftover greens like Swiss chard, spinach, or kale from dinner.
Ingredients:
  • 5 large eggs
  • 2 large egg whites
  • 2 tablespoons chopped fresh parsley
  • 0.25 teaspoon ground black pepper
  • 1 cup chopped red onion
  • 0.25 cup grape tomatoes, halved
  • 1 cup cooked Swiss chard (thawed if frozen)
  • 0.25 cup grated Parmesan cheese
Instructions:
  • First, preheat your oven's broiler and position the oven rack in the upper third for optimal results. In a mixing bowl, beat the eggs and egg whites until they are smooth and well combined. Next, whisk in the parsley, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper until the mixture is evenly blended. Set aside for further use.
  • In a 10-inch cast-iron skillet, warm the olive oil over medium heat. Add the onion, sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Sauté until the onion is soft and translucent, around 5 minutes. Mix in the tomatoes and cook for another minute. Incorporate the cooked Swiss chard and sauté until hot. Pour in the egg mixture, cover, and cook until the edges are set, approximately 5 minutes.
  • Remove the frittata cover, generously sprinkle with Parmesan cheese, and broil in the oven until the cheese is golden brown and the frittata's center is firm, approximately 2 minutes. Rest for 3 minutes before serving.
