Savory ham and cheese frittata, simmered, broiled, and wrapped in tortillas - a perfect addition to your bento box!
Ingredients:
  • 4 eggs
  • 0.5 cup grated sharp Cheddar cheese, divided
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons whole milk
  • 1 tablespoon butter
  • 4 ounces cooked ham, chopped
  • 4 (8 inch) flour tortillas
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler.
  • Combine eggs, 1/4 cup Cheddar cheese, milk, salt, and pepper in a bowl and whisk until smooth.
  • In a small nonstick skillet, gently melt butter over low heat. Add ham and pour eggs over it. Cook until mostly set with a slightly runny top, for about 6 to 8 minutes. Sprinkle the remaining cheese on top of the frittata and place the skillet under the broiler.
  • Broil until top is golden brown and center is set, about 1 to 2 minutes. Allow to cool briefly, then slice into 4 portions and wrap tightly in tortillas.
