Elegantly modern twist on a classic dessert. Heavenly taste.
Ingredients:
  • 500g vanilla custard
  • 300ml thickened cream
  • 55g (1/4 cup) caster sugar
  • 110g (1/2 cup) white sugar
  • 60ml (1/4 cup) water
  • Fresh raspberries, to serve
Instructions:
  • Combine custard, cream, caster sugar, and vanilla in a large bowl and whisk until smooth. Distribute the mixture evenly among four 250ml (1-cup) dariole moulds. Freeze overnight or until set.
  • Begin by covering a large baking tray with foil. In a small saucepan over low heat, combine the white sugar and water. Stir continuously for 5 minutes, or until the sugar dissolves. Increase the heat to high and bring the mixture to a boil. Let it cook without stirring for 5 minutes, occasionally brushing down the sides of the pan with a water-dipped pastry brush until it turns golden. Remove from heat and carefully pour over the foil-lined tray. Allow it to set for 10 minutes before breaking into delicate shards.
  • Take the moulds out of the freezer and let them sit for 5 minutes to soften. Then, unmold onto cold serving plates, sprinkle with toffee pieces, and serve right away with raspberries.
