Raspberry crumb cake is bursting with juicy berries and a buttery crumble topping.
Ingredients:
  • 0.5 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsalted butter
  • 0.75 cup white sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.33333334326744 cup buttermilk
  • 0.33333334326744 cup unsalted butter, melted and cooled
  • 1 large egg
  • 0.5 teaspoon vanilla extract
  • 1.25 cups frozen raspberries
Instructions:
  • Preheat the oven to 375°F (190°C) and grease an 8-inch square pan.
  • Combine brown sugar, flour, and butter in a bowl until it forms a crumbly topping. Set it aside.
  • In a large bowl, mix together flour, white sugar, baking powder, baking soda, and salt.
  • In a separate bowl, whisk together buttermilk, melted butter, egg, and vanilla extract. Combine with the dry ingredients. Pour batter into the pan, and top with raspberries and crumbly topping.
  • Bake in the oven until golden brown and a toothpick inserted in the center comes out clean, for about 35 to 40 minutes.
