Elevate your lunch salad with a refreshing fruity quinoa twist.
Ingredients:
  • 250.00 ml tri-colour quinoa
  • 1/2 small red onion, thinly sliced
  • 60g baby rocket
  • 8 small strawberries, sliced
  • 125g blueberries
  • 100g Persian fetta, drained, crumbled
  • 82.50 ml natural sliced almonds, toasted
  • 62.50 ml balsamic dressing
Instructions:
  • In a saucepan, combine quinoa with 1 1/2 cups of water. Bring to a boil over high heat, then lower the heat, cover, and simmer for 15 minutes until the liquid is absorbed. Remove from heat and let it sit covered for 10 minutes to steam. Fluff the quinoa with a fork and transfer to a large bowl to cool.
  • Combine red onion, rocket, strawberries, blueberries, feta, and almonds with quinoa. Season everything well and toss to mix thoroughly.
  • Portion the fruity quinoa salad into 4 lunchboxes and portion the balsamic dressing into 4 small containers. Chill in the refrigerator until ready to enjoy.
