Crispy, golden pizza cooked to perfection in a frying pan.
Ingredients:
  • 249.00 gm self-raising flour
  • 56.88 gm olive oil
  • 275.00 gm good-quality pasta sauce
  • 1 ball of fior di latte cheese (see note) or 2 bocconcini
  • 3 slices prosciutto
  • 6 kalamata olives
  • Fresh basil leaves
Instructions:
  • In a bowl, delicately sift together the flour and 1 teaspoon of salt. Stir in 2 tablespoons of olive oil and 1/3 cup of water. Use your hands to blend everything into a soft, non-sticky dough, incorporating more flour as needed.
  • Sprinkle flour over the work surface and roll the pastry into a circle large enough to line a 26cm frypan. Preheat the grill to high heat.
  • Warm up the frypan with a tablespoon of oil over low heat.
  • Cook the dough until the bottom is crisp and golden, for about 3-4 minutes.
  • Flip and cook until the other side turns golden, about 2-3 minutes.
  • Smother the dish with the delectable sauce and generously layer it with thinly sliced cheese.
  • Place under the broiler until the cheese is gooey and bubbly, about 1-2 minutes.
  • Sprinkle prosciutto, olives, and fresh basil on top before serving.
