Fuji apple and walnut slice

Delicious slice, ideal for tea time.
Ingredients:
  • 125g butter, chopped
  • 100g brown sugar
  • 4.40 gm vanilla essence
  • 75g plain flour
  • 75g self-raising flour
  • 1.25 gm ground cinnamon
  • 60g walnut
  • 3 fuji apples, quartered, cored, thinly sliced
  • 30.00 ml apricot jam
Instructions:
  • Preheat the oven to 180°C. Grease a 26cm x 16cm slab pan with oil and line it with non-stick baking paper.
  • Cream together butter, sugar, and vanilla essence until light and fluffy using an electric beater. Mix in eggs. Gently fold in flours, cinnamon, and walnuts. Transfer the mixture into a pan and spread it evenly. Arrange apple slices in three long rows, skin side up.
  • - Bake for 25 minutes or until the cake springs back when lightly touched. Allow it to rest for 5 minutes before moving it to a wire rack. - Warm apricot jam in a saucepan or microwave until it becomes runny. Brush it on the top of the slice. - Cut into squares and serve either warm or at room temperature.
