G's Tres Leches Cake

Decadent tres leches cake with airy whipped cream topping. Best enjoyed chilled for ultimate moistness, even better when refrigerated overnight.
Ingredients:
  • 1.5 cups white sugar
  • 0.75 cup unsalted butter at room temperature
  • 6 eggs at room temperature, separated
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1.5 cups whole milk at room temperature
  • 1 teaspoon almond extract
  • 0.75 teaspoon cream of tartar
  • 2 tablespoons white sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 fluid ounce) can evaporated milk
  • 2 tablespoons whole milk
  • 1 pint heavy whipping cream
  • 0.25 cup white sugar
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then prepare a 9x13-inch baking pan by greasing and flouring it.
  • In a large bowl, cream together 1 1/2 cups of sugar and unsalted butter until fluffy and pale yellow, for 3 to 5 minutes. Add and mix in 6 egg yolks one at a time. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually incorporate the flour mixture into the egg yolk mixture, alternating with 1 1/2 cups of milk until a smooth batter forms. Stir in almond extract.
  • Using an electric mixer, whip 6 egg whites with cream of tartar until frothy; gradually add 2 tablespoons of sugar until stiff peaks form. Carefully fold the airy egg white mixture into the batter to maintain volume. Transfer the cake batter into the prepared baking pan.
  • Bake in a preheated oven until a toothpick inserted into the center of the cake comes out clean, for about 35 to 45 minutes. Let the cake cool completely in the pan on a rack.
  • Combine sweetened condensed milk, evaporated milk, and 2 tablespoons whole milk in a bowl. Poke holes all over the cake and pour the milk mixture over it.
  • Whisk together cream, 1/4 cup of sugar, and 1 teaspoon vanilla extract until stiff peaks form. Spread the whipped cream over the cake and chill in the refrigerator for at least 1 hour. For best results, refrigerate any remaining cake. The cake's flavor improves with time, so enjoy it a day or two after baking.
