Mix colorful garden beans with tangy balsamic-mustard dressing for a vibrant and flavorful salad.
Ingredients:
  • 1/2 lb. fresh green beans, trimmed
  • 1/2 lb. fresh yellow wax beans, trimmed
  • 1/2 cup finely chopped red onion
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon coarsely ground black pepper
Instructions:
  • If desired, halve the beans. Put the beans in a microwave-safe 2-quart bowl. Add 1/2 cup water and cover with microwave-safe waxed paper. Microwave on High for 10 to 12 minutes until just tender. Drain and rinse with cold water to cool before draining well.
  • Mix all dressing ingredients in a medium bowl until well combined.
  • Combine beans and onions with the dressing, ensuring they are evenly coated. Refrigerate for at least 1 hour to enhance the flavors before serving.
