Colorful vegetable stir fry with sautéed pecans for a unique twist.
Ingredients:
  • 1 tablespoon extra virgin olive oil
  • 4 skinless, boneless chicken breast halves - cut into strips
  • 1 cup julienned carrots
  • 1 small onion, chopped
  • 1 cup fresh sliced mushrooms
  • 1 zucchini squash, peeled and cut into 1 inch rounds
  • 2 yellow summer squash, peeled and sliced into 1 inch pieces
  • 0.5 cup pecan halves
  • 1 teaspoon coarse ground black pepper
Instructions:
  • Drizzle oil in a nonstick skillet or wok over medium heat. Sear and stir chicken strips until golden. Toss in carrots and onion, cook for 3 minutes.
  • Combine the mushrooms, zucchini, and squash in the pan. Cook until the squash starts to soften. Add the pecans and season generously with pepper. Toss everything in the pan for 2 to 3 minutes, then enjoy your delicious dish.
