Enhance lamb's succulence with a quick rosemary rub for chops or leg.
Ingredients:
  • 1 (5 pound) leg of lamb
  • 3 cloves garlic, cut into slivers
  • 3 teaspoons dried dill weed
  • 1.5 teaspoons salt
  • 1 teaspoon dried rosemary, crushed
  • 0.5 teaspoon ground black pepper
Instructions:
  • Preheat your oven to 325°F (165°C) to create the perfect cooking environment.
  • Using a knife, create small incisions in the leg of lamb to insert garlic slivers. Combine dill, salt, and rosemary, then generously season the lamb. Arrange the lamb on a rack with the fatty side facing up in a shallow roasting pan.
  • Roast in the preheated oven for 2 to 2 1/2 hours until reaching an internal temperature of 155°F (68°C) for medium. Rest covered in foil for 15 to 20 minutes before slicing. This allows the lamb to finish cooking and the juices to settle for optimal carving.
