Quick and easy asparagus soup with garlic and green onions for a refreshing dish.
Ingredients:
  • 1 tablespoon olive oil
  • 5 cloves garlic, thinly sliced
  • 4 green onions, coarsely chopped
  • 1.5 pounds asparagus, trimmed and coarsely chopped
  • 2 (14 ounce) cans vegetable broth
  • salt and ground black pepper to taste
Instructions:
  • Warm up the olive oil in a saucepan over medium heat.
  • Saute garlic and green onions in a saucepan until garlic is lightly golden, approximately 3 minutes.
  • Sauté asparagus with garlic and green onions until just tender, approximately 2 minutes.
  • Bring vegetable broth to a boil, then simmer until asparagus is tender, about 10 minutes. Let cool slightly before serving.
  • Fill the blender halfway with soup and cover with a lid. Start the blender carefully with a few quick pulses to get the soup moving, then puree in batches until smooth.
  • Return the soup to the saucepan, warm it up, and season it with salt and freshly ground black pepper to your liking.
