Garlic Roasted Duck Breast

Crispy skin-on duck breast, stuffed with garlic and rosemary, pan-seared and roasted to perfection - a luxurious dish for one.
Ingredients:
  • 1 (6 ounce) skin-on duck breast
  • 2 cloves garlic, cut into 1/8-inch strips
  • 1 teaspoon ground black pepper
  • 1 sprig fresh rosemary
Instructions:
  • Lay the duck breast skin side-down on a cutting board and carefully make a slit from top to bottom, 2/3 of the way through. Season generously with salt and pepper.
  • Preheat the oven to 400°F (200°C).
  • Preheat a skillet over medium-high heat. Add duck breast skin side-down and cook until browned, approximately 30 seconds per side.
  • Lay the duck breast on a clean work surface, skin-side down. Stuff the slit with 3 or 4 garlic strips, then place a rosemary sprig on top of the garlic and add the remaining garlic strips. Transfer the duck breast, skin side-up, to a baking pan.
  • Bake in the preheated oven until the center reaches 120 degrees F (50 degrees C on a thermometer), for approximately 10 minutes. Then, cover with foil and let it rest for 5 minutes before slicing.
