Roasted rainbow baby carrots with garlic, parsley and butter, cooked in a convenient foil packet for a deliciously simple dish.
Ingredients:
  • 1 (8 ounce) package rainbow baby carrots, cut in half lengthwise
  • nonstick heavy-duty aluminum foil (such as Reynolds Wrap®)
  • 2 large cloves garlic, roughly chopped
  • 0.5 tablespoon chopped fresh parsley
  • 1 tablespoon salted butter, cubed
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • On a sheet of aluminum foil, neatly arrange carrots in the center. Sprinkle with garlic and parsley, then dot with butter cubes and season generously with salt and pepper. Fold the foil around the carrots and pinch to seal, creating a packet. Transfer the packet to a sheet pan.
  • Roast in the oven until the carrots are tender, approximately 25 minutes.
