Delicious low-fat burritos bursting with flavor, perfect for meat-free burrito lovers. Mildly spicy for a satisfying kick without overpowering heat.
Ingredients:
  • 1 pound ground turkey
  • 2 (7.75 ounce) cans Mexican-style hot tomato sauce (such as El Pato®)
  • 0.5 small onion, diced
  • 1 (16 ounce) can fat-free refried beans
  • 1 (16 ounce) container fat-free sour cream
  • 0.75 cup shredded reduced-fat Cheddar cheese
  • 6 (10 inch) flour tortillas
Instructions:
  • Heat a large skillet over medium-high heat. Add ground turkey and cook until browned. Stir in tomato sauce, corn, and onion. Reduce heat to medium and simmer, stirring occasionally, until liquids reduce, about 20 minutes.
  • Heat beans in a medium skillet over gentle heat. Get sour cream and cheese ready to sprinkle on the burritos. Warm tortillas individually on a stove burner for 1 to 2 minutes, flipping occasionally. Layer beans, meat mixture, sour cream, and cheese on each tortilla. Fold, serve warm, and enjoy.
