Chill out with a refreshing Spanish cold vegetarian soup.
Ingredients:
1green capsicum
1 large red onion, roughly chopped
1sliceday-old Italian-style bread
40.00 ml red wine vinegar
1kg ripe tomatoes
1cucumber, peeled
1garlicclove
80ml olive oil
Croutons, to garnish
1egg, hard boiled, chopped, to garnish
Choppedparsley, to garnish
Instructions:
Combine the bread and red wine vinegar in a shallow bowl, add 1/4 cup (60ml) water, and let it rest as you get the vegetables ready.
Start by deseeding the tomatoes, cucumber, and capsicum, then give them a rough chop. Combine these veggies in a large bowl with onion and garlic. Drizzle with olive oil and season with salt and pepper. Use a stick blender or food processor to blend everything together. Add bread and blend again. Strain the mixture through a sieve into a bowl. Just before serving, add ice cubes and top with croutons, chopped boiled egg, and fresh parsley. Delight in this refreshing dish before your summer meal.
