Chill out with a refreshing Spanish cold vegetarian soup.
Ingredients:
  • 1 green capsicum
  • 1 large red onion, roughly chopped
  • 1 slice day-old Italian-style bread
  • 40.00 ml red wine vinegar
  • 1kg ripe tomatoes
  • 1 cucumber, peeled
  • 1 garlic clove
  • 80ml olive oil
  • Croutons, to garnish
  • 1 egg, hard boiled, chopped, to garnish
  • Chopped parsley, to garnish
Instructions:
  • Combine the bread and red wine vinegar in a shallow bowl, add 1/4 cup (60ml) water, and let it rest as you get the vegetables ready.
  • Start by deseeding the tomatoes, cucumber, and capsicum, then give them a rough chop. Combine these veggies in a large bowl with onion and garlic. Drizzle with olive oil and season with salt and pepper. Use a stick blender or food processor to blend everything together. Add bread and blend again. Strain the mixture through a sieve into a bowl. Just before serving, add ice cubes and top with croutons, chopped boiled egg, and fresh parsley. Delight in this refreshing dish before your summer meal.
